The Official Lobel's Guide to Meat

At Lobel's, we love helping every customer select the perfect cut of meat. In this section, we share advice you can use to make the right selection, and to improve the results you get from every recipe.

This sort of shoptalk is part of the experience of shopping at our New York store, we're glad to share it with you, here on the Web. If you don't find an answer to your question here, fill out our Email Us form. We think that the more you know about meat, the more you will appreciate our attention to detail and superb customer service.

"'Brutal' is how the Lobel's selection process is described..." according to an article in Wine Spectator.

The Lobels shop the wholesale market daily for Prime beef, lamb and veal. From the selection available each day, the Lobels select the best of the best. Prime meat is always at a premium at the wholesale market. For example, just 2.5% of all beef graded today makes the top Prime grade.

Your Lobel's order arrives fresh, meaning that the Prime meat delivered to your door has never been frozen. Lobel's fresh Prime meat is versatile: you can prepare the meat right away, store it in the refrigerator in its Cryovac package for a week, or you can freeze it. So, as you can see, the options available to you by ordering fresh meat far outweigh the advantages of meat that has been frozen before shipping.
