INGREDIENTS |

1 lb. Ground Beef
1 lb. sausage meat, highly seasoned
1 (12 oz.) package cottage cheese
1 (8 oz.) container sour cream
2 slices rye bread, crumbled
3 eggs, beaten
2 packages onion soup mix (Lipton's works well)
1 Tbsp. A-1 sauce
Dash of tabasco
Worcestershire sauce (to taste)
Soy sauce (to taste)
Curry powder (to taste)
Dash of powdered ginger
Pinch of nutmeg
Pinch of rosemary
Freshly ground pepper
1/4 pound butter
2 onions, chopped finely
1 1/2 cups chili sauce

DIRECTIONS |
|
1. Preheat oven to 250°F. Bring meat and cheese to room temperature so that they will be easy to combine.
2. Place meat and cheese in a large mixing bowl and add the sour cream, crumbled bread, eggs, and onion soup mix. Stir well, then add the seasonings. After you have mixed everything, place in a large loaf pan.
3. Meanwhile, start on the sauce. Melt the butter in a frying pan and add the finely chopped onions. When they are limp and slightly golden, gradually add the chili sauce.
4. Place the meat loaf in the oven and bake for 1 1/4 hours, basting every 15 minutes with the chili sauce. |

SERVING SUGGESTIONS |

Former Arkansas Governor Winthrop Rockefeller loves good food, especially this meat loaf that his wife created. It is highly seasoned and demands a basting sauce. For this reason it stays moist, and should any of it be left over, it is excellent for sandwiches the next day.
Mrs. Rockefeller likes to serve this dish with fluffy rice sprinkled with slivers of water chestnuts. Then she usually has a tossed salad (or a green vegetable) and a dry white or a light dry red wine. |
