Braised Flanken (Short Ribs of Beef)

Serves: 4 to 6

Time: 2 1/2 to 3 hours

INGREDIENTS

4 pounds short ribs of beef (flanken)

2 tablespoons flour

Salt and freshly ground pepper

2 tablespoons oil

2 cloves garlic

4 small white onions

3 carrots, quartered

1 stalk celery, quartered

1/2 green pepper, sliced

1 cup dry red wine

DIRECTIONS

1. Preheat oven to 300°F. Wipe ribs off with paper towels, then sprinkle well with a mixture of flour, salt, and pepper.

2. Heat oil in Dutch oven and first brown garlic, then push aside and brown flanken on all sides.

3. Remove from heat, add vegetables, and pour in wine. Cover pan and cook for about 2 1/2 hours. Baste frequently and add more wine if sauce has evaporated.

Serving Suggestion

Serve with noodles, broccoli, and a good dry red wine.
