Cranberry Balsamic Glaze

Cooking method: Simmering
Serves 4


1 1/2 tbsp. unsalted butter
1 cup finely chopped shallot
1 cup cranberry juice
1/2 cup balsamic vinegar
1 tbsp. salt
1/2 tbsp. black pepper, cracked


1. Heat butter in heavy saucepan over medium heat. Add shallots and cook until golden brown, about 5 minutes.

2. Add remaining ingredients and simmer uncovered, stirring occasionally, until thickened, about 25 to 30 minutes.

3. Use as a glaze for poultry, pork, or game.
