Josef & Elizabeth Brunner's Egg and Sausage Casserole
INGREDIENTS

NOTE: The following ingredients are listed on a per-person basis. Increase as desired for heartier appetites, or multiply the ingredients to serve as many as desired, using a larger casserole dish or individual casserole dishes as needed.

2 hard-boiled eggs, quartered lengthwise

2 Country-Style Breakfast Sausage Links

1/4 cup sliced canned mushrooms

3/4 cup shredded cheese mixture (e.g., cheddar, Swiss, and parmesan)

Bread crumbs (buttered, plain, or seasoned, as desired)

DIRECTIONS
Night before serving

1. Brown sausages in a frying pan. Cut finished sausages into thirds.

2. Gently mix eggs, sausage, mushrooms, and cheese together.

3. Place in casserole dish. Top with bread crumbs.

4. Cover and refrigerate overnight.

Next morning

5. Place in preheated 325°F oven and bake until bubbling in center—about 1 hour.

6. Serve with toasted English muffins or other breakfast bread.
