Pork Chops in Red Wine

Cooking method: Pan Searing / Pan Roasting
Serves 4
Total preparation time: 40 min.

4 (12 oz.) Pork Rib Chops
1 tbsp. butter
6 shallots, chopped
1 cup dry red wine
Pepper, freshly ground

1. Preheat oven to 350°F.

2. Trim fat from chops and place in heavy skillet sizzling with butter. Sauté over high heat until brown on both sides. Sprinkle with salt and pepper and paprika.

3. Place chops in casserole, surround with shallots, and sprinkle with a pinch of thyme and basil. Add wine. Cook covered for about 35 minutes, adding more wine if necessary.

This dish may be "held" longer by reducing heat to low, but be sure there is enough wine to keep moist.

Serve with buttered spinach, spiced peaches, and a dry red wine.
