Serves 4 Time: About 40 minutes
4 (12 oz.) Pork Rib Chops 1 tablespoon butter Salt and freshly ground pepper Paprika 6 shallots, chopped Basil Thyme 1 cup dry red wine
Preheat oven to 350°F. Trim fat from chops and place in heavy skillet sizzling with butter. Sauté over high heat until brown on both sides. Sprinkle with salt and pepper and paprika. Place chops in casserole, surround with shallots, and sprinkle with a pinch of thyme and basil. Add wine. Cook covered for about 35 minutes, adding more wine if necessary.
