Recipes & Techniques: Beer and Onion Boil for Fresh Bratwurst


Josef & Elizabeth Brunner's Beer and Onion Boil for Fresh Bratwurst

Serves: 8

INGREDIENTS

4 (12 oz.) bottles dark beer (such as Amber Bock or Stout)

1 medium red onion, thinly sliced

1 tablespoon green peppercorns (whole)

Pinch ground nutmeg

2 lbs. Fresh German Bratwurst (or other style of fresh brats)

DIRECTIONS

1. Place beer, onions, peppercorns, and nutmeg in a large sauce pan and place over high heat. Bring to a boil and let cook for about 30 minutes.

2. Reduce heat to medium and add sausage, making sure that all ingredients are covered by the beer mixture. If needed, add more beer to cover. Simmer for 10 to 12 minutes.

3. Remove sausages from beer mixture. Brown sausages as desired on grill or in a frying pan.

4. Drain onions from beer mixture and serve with sausages, hearty bread or rolls, and mustard.
