Spicy Dry Rub

Cooking method: Binding

Dry rubs can be made with any of your favorite spices—think of our formulas as blueprints for your own creations. Don't be shy when using one. Rub it liberally over the meat.


2 tbsp. chili powder
2 tbsp. cayenne powder
1 tbsp. ground coriander
1 tsp. crushed red pepper
Salt, to taste
Black pepper, freshly ground, to taste


1. Mix the ingredients together in a glass jar or bowl. Cover and shake to mix. Store in a cool place until ready to use.


Rub the mixture into the meat, and allow to marinate in the refrigerator. Pat meat dry before grilling.
