Thai Caramelized Grilled Pork

Cooking method: Pan Grilling
Serves 4

INGREDIENTS

2 (10 oz.) Pork Tenderloins
1/4 cup finely chopped shallots
1 tbsp. fresh lime juice
1 tbsp. Asian fish sauce

DIRECTIONS

1. Cut each tenderloin into three equal pieces. Slice each piece lengthwise into strips about 1/4 inch thick. Cook chili sauce, lime juice, fish sauce, and shallots until shallots are softened, about 2 to 3 minutes. Pour sauce over pork until well coated.

2. Heat a lightly oiled grill pan over moderately high heat and grill pork in small batches, turning over once until just cooked through, about 1 minute per side. Alternatively, grill over moderately high direct heat on a gas or charcoal grill. Oil grill grid before putting the meat on to cook.
