Ca' del Non 25-Year Balsamic Vinegar (Modena, Italy)

About Ca' del Non

Michele and Mariangela Montanari are a young couple in their twenties, who have devoted their passion and hard work in producing their Traditional Balsamic Vinegar of Modena to the memory of their great-grandfather Alfonso (hence the name, "Ca' del Non" (which in the local dialect means "Home of Grandpa"). They rebuilt and renovated the old family vinegar house, or acetaia, in Vignola and today carry on the production of this traditional balsamic vinegar.

Ca' del Non handles every aspect of production, from the processing of the must obtained from its own Trebbiano white grapes, to the bottling and packaging, which, in compliance with the law, is entrusted to the Consortium of Producers of the Traditional Balsamic Vinegar of Modena. The magnificent results can be seen by sliding a few drops down the back of a spoon: the vinegar has a brilliant dark brown color, an amazing syrupy consistency, and an exhilarating and luscious taste and aroma.

Each batch of vinegar is aged in a series of casks made of different woods that impart their own unique flavors. From oak barrels to chestnut to cherry, ash, and mulberry, the vinegar's flavor intensifies and its viscosity increases—losing as much as 2/3 of its original volume—into a dense liquid of incomparable flavors.
