Tracklements Horseradish and Cream Sauce

At British tables, you just can't serve a regal standing rib roast without a pot of real English horseradish right beside it. It's tradition. It's de rigueur. It's eye-watering. It's delicious. This sauce is pungent, to be sure, but its sharp edges are smoothed considerably by a measure of real cream. And, for those with sensitive palates, the sauce's potency can be modulated with the addition of some crème fraiche or heavy cream.
