Lobel’s Heritage Beef
and Pork come from pure- and cross-bred livestock
from rare and endangered breeds. The steers
and pigs in the program are raised on the
open pastures of small family-owned farms
in New York State and throughout New England.
The livestock’s feeding regimen comprises
a 100% vegetarian diet. In addition, these
steers and pigs are free of subtherapeutic
antibiotics and growth hormones.
Many farmers who practice breed
conservation do it now as an avocation …
along with day jobs and raising kids. They
employ environmentally friendly agricultural
and humane livestock-management practices.
By creating a successful market
for their artisanal meat products, these breeds
will be propagated for generations to come.

DRY-AGED
HERITAGE BEEF
- Raised on the lush pastures of small, family-operated farm throughout Upstate New York and the New England states, these heritage cattle are grass-fed, grass-finished and come from such breeds as Galloway, Hereford, Devon and Highlander.
- Free of subtherapeutic antibiotics and
growth hormones
- High in Omega 3 oils.
- Lower in fat. Grass-fed beef is significantly
less marbled than the richly marbled USDA
prime beef we sell.
- Dry-aged for up to six weeks to ensure
maximum tenderness and distinctive beefy
flavor.
HERITAGE
PORK
- Tucked away in the rolling hills that
link New York State to Vermont, pure-
and cross-bred Tamworths, Gloucestershire
Old Spots and Large Blacks forage among
fresh grass and clover in movable, open
pens of Flying Pigs Farm. Their hospitable
and stress-free environment is complemented
by a feeding program that is free of subtherapeutic
antibiotics and growth hormones.
- Our heritage pork is unlike any other
– a taste so deep and rich it echoes
the flavor of pork from a bygone era.
The meat is intensely marbled and, whether
grilled, smoked, roasted, sautéed,

prepared and purchased.
Ordering Lobel’s Heritage
Beef and Pork is a totally customized process
that integrates the Lobels’ artistry
as butchers and the customer’s family
and entertaining preferences.
When custom-cutting a whole
or half steer or pig, we will guide you though
our recommended approach, based on our decades
of experience in working with customers of
widely varying tastes and needs.
- Supplies are extremely limited and,
therefore, subject to availability.
- Advance ordering required – up
to six-week lead time.
- Specific breed purchases are not possible
Ordering Process
- Call 1-866-595-6235 for customized order
processing, at which time we will take
down all of your contact information and
you can place your reservation for a whole
or half steer or pig or beef primal.
- After this initial consultation, we
will contact you with dates for processing
and delivering your order.
- Allow up to six weeks for processing,
dry-aging, custom-cutting, freezer-safe
wrapping, flash freezing and shipping.
- Also, we will review our recommended
cutting options and your preferences.
- We will estimate the delivery date and
pricing. At this time, also, we will require
a non-refundable deposit to confirm your
order.
- Within two weeks of shipping, we will
notify you of the final pricing and confirm
the delivery date.
- All meat products will be delivered
to you frozen.
- Once purchased, the heritage meat products
cannot be returned.
PRICING
Lobel’s Heritage Beef
and Heritage Pork will be sold at the current
market price per pound of the total primal
weight of individual steers and pigs. Based
on differing sizes of pure- and cross-bred
steers and pigs, yields will vary from animal
to animal.
What is a primal?
A primal is a large subsection
of a steer or pig carcass, comprising a single
muscle group – tenderloin, short loin
and rib are examples.

CUTTING
OPTIONS
Based on our years of experience
as butchers interacting with our customers
one-on-one over the counter in our Madison
Avenue butcher shop, we have a good idea of
how most people would choose to have a side
of meat sectioned into specific cuts.
Prior to ordering, we recommend
you consider the following:
- Will you use this meat more for entertaining
or family meals at home?
- How many in your family? How many do
you typically entertain?
- Do you prefer bone-in or boneless cuts?
- Do you want the tenderloin left whole?
As your guide, we’ll review
the various options available for cutting.
By making one choice, you eliminate others.
For example:
| If you purchase a whole steer, you can

If you purchase a ½ steer, however,
you will have fewer options because there
is only one tenderloin per side of an
animal. You’ll need to choose from: |
- Strip steaks and a whole tenderloin
from one half
and
- Porterhouse and T-bone steaks (which
contain the strip and various-sized
portions of tenderloin) from the other
half.

All of the heritage meat you
will receive will be custom-cut to your specifications.
All cuts will be individually wrapped in freezer-safe
material and flash frozen.

SHIPPING POLICY
Once your custom cutting plan has been developed, your heritage meat is cut, frozen, individually wrapped, and packed in dry ice. It is then shipped via two-day delivery by either FedEx or UPS.
Shipping costs are as follows:
- Beef primals: $24.95
- Half pig: $69.95
- Half steer: $99.95
- Whole pig: $139.95
- Whole steer: $199.95
