Tracklements Horseradish and Cream Sauce |

This sauce is pungent, to be sure, but its sharp edges are smoothed considerably by a measure of real cream. And, for those with sensitive palates, the sauce's potency can be modulated with the addition of some crème fraiche or heavy cream.
