Lobel’s heat-and-serve BBQ Prime Beef Brisket is hand-rubbed with black pepper, marjoram, brown sugar and a blend of herbs and seasonings. Then it’s bathed in a spicy, vinegary mopping sauce and smoked low and slow for 14 hours or more over mesquite and apple wood.

Fully cooked, the brisket can be brought up to serving temperature in your oven or in your own smoker.

One frequent question about our new smoked BBQ Prime Beef Brisket is: What style of barbecue is it? Actually, it’s not just one style.

The Lobel’s approach to making smoked brisket is truly unique—one that borrows from different barbecue traditions—resulting in an equally unique taste experience.

Strictly speaking, smoked brisket is a specialty most frequently associated with Texas barbecue—usually doused or served with a side of sweet-and-smoky, tomato-based sauce.

We bathe these briskets with a thin, vinegary mopping sauce that reflects a Carolina barbecue influence. But here’s another difference: In the Carolinas, vinegary mops are most often used on pork, not beef.

We smoke the briskets low-and-slow for 14 hours or more over mesquite—in good Texas fashion. But we take it one step further by finishing the briskets with apple wood to mellow the boldness of the mesquite smoke and to round off the edges of flavor with touch of sweet apple smoke.

What makes Lobel’s brisket so good?

Brisket is a comparatively inexpensive cut of meat noted for big beef flavor and the number of servings a single brisket can produce. But you have to tame brisket before you can render it tender.

Brisket of lower USDA grades tends to be tough and very dry with little or no marbling and pockets of fat—hence its affinity for long hours of low-temp cooking in a smoker or braised in an oven.

The first thing the Lobel’s did to turn brisket on its head, so to speak, was to raise the stakes by using the very best brisket available—abundantly marbled and flavorful.
