Tracklements Piccalilli |
If you’re familiar with British pub fare, you’ve undoubtedly run into such uniquely British condiments as Branston pickle and brown sauce. Another popular condiment, or tracklement as they’re known in merry old England, piccalilli has its own distinctive place plate-side in pubs and homes as an accompaniment to cheeses, meat pies, and all manner of smoked and cured meats, particularly sausages.
British piccalilli is a tart-and-tangy relish of minced vegetables (most notably cauliflower), vinegar, sugar, spices, and mustard that is brightly colored with tumeric. In this country, the piccalilli equivalent is known as hot dog relish—usually a shortcut combination of yellow ballpark mustard and sweet pickle relish.
Branston pickle is piccalilli’s sweet and brown alter-ego, and brown sauce is akin to bottled steak sauces that are malt-vinegar based and include fruit (usually raisins) and spices. Alternatively, Tracklements Piccalilli has a stronger vinegar snap, of course cauliflower, as well as gherkins, onions, bell peppers, raw cane sugar, and spices.
Serving Suggestions
Piccalilli’s sweet-and-sour impact makes it ideal for cutting through strong or smoky flavors—it stands up well to rich, robust sausages. Try a dollop with Lobel’s Andouille, Hot Links, Kielbasa, or Chorizo grilled on a hearty bun and served alongside an icy beverage—you’ll find that hard to beat on a sunny afternoon.
Serve with aged English or Vermont cheddar or other hearty cheeses or turn it into an appetizer. Top crackers or French bread rounds with cheddar and a dab of piccalilli—heat in a conventional oven at 350°F or microwave until the cheese starts to bubble—a great snack just for you or a crowd.
