Lobel's Sausage Selections

Our Sausage Shop features artisanal sausages made for us by Austrian native and master sausage maker Josef Brunner, who is as inventive as he is skilled at creating sausages of delightful textures and solid, clean flavors. In addition to many traditional European-style sausages, Josef excels at creating his own unique variations, including game sausages and numerous seasonal varieties.

Preparing Fresh Sausages

All of the fresh sausages we sell through Lobel’s Sausage Shop can be simply prepared using the following method regardless of the sausage link’s size.

Fresh sausages should be simmered before a final browning in the same pan or on the grill.

  1. Place sausages in a frying or sauté pan just big enough to hold them in a single layer.
  2. Fill pan with water to a depth of about 1/4 inch.
  3. Simmer sausages until the water has evaporated.
  4. To brown the sausages:
    • Add a small amount of oil to the pan—be sure the pan is dry to avoid spattering. Cook gently over medium heat until sausages are browned. Do not cook too hot or too fast or the fragile casings will break.
    • If preparing sausages for the grill, remove from pan after simmering and grill over moderate heat.
