Amazing!The best corned beef I have ever cooked. I cooked 18 pounds for St Patricks day and a week later I am ordering more. It was the best I have ever cooked or eaten

Amazing Pastrami!!First time smoking Pastrami, but smoke brisket all the time so this was on my cooking bucket list!! Brisket arrived trimmed and brined for corned beef and all we did was rinse it off and add a rub for pastrami which included black pepper, coriander, garlic powder, onion powder, mustard and fennel seeds. Since it has already been brined and corned no need for salt. Smoked hot and fast for 3 hours and then wrap in foil pan covered for another 3hours then let rest in closed cooler for 4 hours. Smoked with oak and hickory wood. Unbelievable taste along with being tender and juicy!!! A++++

Award winning pastrami Holy cow this corned beef brisket was amazing ! I made homemade pastrami with this for my first BBQ competition and it won 3rd place overall. It was SO tender juicy and flavorful and it received high praise from everyone that had the pleasure of eating it. One of the judges who happens to be a pastrami connoisseur said it was the best pastrami he\s ever had....it just melted in his mouth.
