Greek Lamb Burgers

Ground lamb can be mixed with all manner of flavorings, including piquant kalamata olives, and still taste very much like lamb.

    1 tablespoon olive oil
    1 cup onion, diced
    1 (large clove) garlic, minced
    2 pounds ground lamb
    2 tablespoons flat-leaf parsley, chopped
    2 tablespoons kalamata olives, chopped
    1 tablespoon fresh mint, chopped
    vegetable oil cooking spray

Directions

    Heat the olive oil in a skillet over medium heat. Add the onions and cook for about 2 minutes, or until they begin to soften. Add garlic and cook for 2 or 3 minutes longer, or until the onions are tender. Set aside to cool.
    Combine the lamb, parsley, olives, mint, and cooled onions in a large bowl. Using your hands, mix well. Form into 6 patties. Refrigerate until ready to grill.
    Prepare a charcoal or gas grill. Lightly spray the grill rack with vegetable oil cooking spray. The coals should be hot.
    Grill the burgers for about 7 minutes. Turn and grill for about 6 minutes longer for medium-well burgers. Serve with the salsa.

Tips:

You can cook the onions and garlic in a skillet in the kitchen or, if you have a gas grill with a burner, cook them outside.
