Madison Avenue Barbecue Sauce

We sell a bottled barbecue sauce very similar to this one in our New York shop, which is on Madison Avenue near the corner of 82nd Street. It's great on beef, pork, or chicken. If you prefer hotter sauce, increase the amount of cayenne. Barbecue sauce is meant to be served with the cooked meat, not used as a marinade. However, you can slather it on chicken breasts or pork chops a few minutes before they are ready to come off the grill. If you do, then you can call it a "moppin" sauce.

    1 cup tomato sauce
    3/4 cup honey
    3/4 cup soy sauce
    6 tbsp. distilled white vinegar
    1/4 cup light corn syrup
    3 tbsp. Worcestershire sauce
    2 tbsp. hoisin sauce
    1/2 tsp. cayenne pepper
    Salt, to taste
    Black pepper, freshly ground, to taste

Directions

    Combine the ingredients in a non-reactive saucepan, stir, and cook over medium heat for about 30 minutes, or until the flavors blend. Let cool and use immediately, or cover and refrigerate for up to 5 days.
