Double Hickory Smoked Slab Bacon

Our Double Hickory Smoked Bacon is made the Old World way using untrimmed pork bellies with rib bones intact.


After curing and smoking twice over hickory wood, the rib bones are removed leaving small ridges of delectable finger meat connected to the streaky belly for a distinctive flavor and look.

Sold in about 2.5-pound slabs, our Double Hickory Smoked Bacon comes unsliced. It can be sliced thin for breakfast or cut thick for lardoons as a first step in making a myriad of braises, pastas, vegetable sides, and stews, including such classics as Coq au Vin and Boeuf Bourguignon (Beef Burgundy).
