Guacamole Burger

Guacamole is a Mexican side dish that can seem like a difficult task to take on at home. Following these steps will guide you on your way to making crowd-pleasing guacamole to top the perfect burger.

    2 lbs. Ground Beef
    Salt, to taste
    Vegetable oil cooking spray
    Black pepper, freshly ground, to taste

    Guacamole

    3-4 Hass avocados (depending on the size)
    1/2 jalapeño pepper, diced
    1/2 medium red onion, diced
    1-2 small tomatoes, diced
    1 teaspoon cumin
    fresh cilantro, to taste
    1 clove of garlic, minced
    juice of 1 lime
    salt and pepper, to taste

Directions

    Combine the beef, salt, and pepper in a bowl. Using your hands, mix well. Form into 6 patties. Refrigerate until ready to grill.
    Make the guacamole. Add the avocado, lime juice, cumin, salt, and pepper to the molcajete or bowl. Mash the avocados and spices together into a paste or until you’ve reached your desired consistency. Add the jalapeño, tomato, minced garlic, chopped cilantro, and red onion. With a large spoon, fold the ingredients gently together until combined. Taste the guacamole and add freshly ground salt and pepper to taste. If desired, add the radishes for a beautiful presentation.
    Prepare a charcoal or gas grill. Lightly spray the grill rack with vegetable oil cooking spray. The coals should be hot.
    Grill the burgers for about 5 minutes. Turn and grill for 4 or 5 minutes longer for medium-well burgers. Serve with Guacamole, if desired.

Tips:

Try slicing the halved avocado lengthwise and crosswise while still in the skin, then with a large spoon, run the spoon close to the skin edges to get nice chunks of avocado.

Serving Suggestions:

Tomatoes add a nice pop of color, juiciness, and sweetness to guacamole. Thinly matchstick radishes make for a nice garnish.
