Ground lamb is mixed with sautéed onions, garlic, parsley, kalamata olives, and fresh mint, creating a bold, Mediterranean-inspired flavor. Heat the olive oil in a skillet over medium heat. Add the onions and cook for about 2 minutes, or until they begin to soften. Add garlic and cook for 2 or 3 minutes longer, or until the onions are tender. Set aside to cool.
Combine the lamb, parsley, olives, mint, and cooled onions in a large bowl. Using your hands, mix well. Form into 6 patties. Refrigerate until ready to grill.
Prepare a charcoal or gas grill. Lightly spray the grill rack with vegetable oil cooking spray. The coals should be hot.
Grill the burgers for about 7 minutes. Turn and grill for about 6 minutes longer for medium-well burgers. Serve with the salsa.
