Pork with Clams & Sweet Red Pepper Paste

Tender cubes of pork are slowly simmered with garlic, onions, white wine, and herbs until richly flavorful. Toward the end of cooking, sweet red pepper paste is stirred in to preserve its vibrant sweetness, and fresh cockles (or clams) are added for a briny finish. Inspired by traditional Iberian cooking, this dish beautifully balances savory pork with bright seafood flavors.
