"I received it and it is waiting in the refrigerator until Sunday when I will prepare it for my two adult daughters for Father’s Day. I will be cooking it Alla Florentine style over an open Weber Kettle drum grill using a mix of charcoal and olive tree wood briquettes. Only seasoning will be kosher salt and fresh pepper, brushed as it is cooking with a brush of fresh Rosemary and Sage in Olive oil. Expect to grill 4 minutes on each side over direct heat and then 5 minutes standing on the bone. I’ll let you know how it turns out."
