Of all the beef produced in the U.S., only 2% is certified prime grade by the USDA. From that small amount, the Lobels choose only the top 2% of high prime—you just can't get any better than that.

Our Start

Opening of The First Lobel's Butcher Shop

Morris joined the family business in 1911 at the age of 17. After emigrating to the United States, he settled in New York, where he went on to open a butcher shop—first in the Bronx and later at the current location on the Upper East Side of Manhattan.

Iconic Butcher Shop

1096 Madison Avenue Grand Opening

We opened our iconic butcher shop at 1096 Madison Avenue in Manhattan on August 30, 1954. Operated by Morris Lobel and his sons Stanley, Leon, and Nathan. The shop has remained in the same location for over 70 years. We still maintain old-world traditions, such as sawdust on the floor and hand-cutting meats.

Literary Milestone

"Meat"

The Lobel brothers became published authors in 1971 with their inaugural guide, Meat. This comprehensive 311-page book shared our family’s deep knowledge of meat selection and preparation with the world, launching a series of successful cookbooks and establishing us as America’s most trusted meat experts.

We Launched Our Mail Order Business

Embracing the dot-com era, the Lobel's expanded beyond New York City not with brick-and-mortar, but with bandwidth. By launching their mail-order business, they made their USDA prime, dry-aged beef available nationwide—delivering it fresh (never frozen) in airtight, chilled packages, the same as today!
