Grilled Bacon-Wrapped Scallops

    1 lb. package sea scallops
    12 oz bacon
    1 teaspoon salt
    1 teaspoon pepper
    1 tablespoon olive oil
    wooden toothpicks, or skewers


    Soak toothpicks in warm water for 10 to 30 minutes.
    Remove scallops from packaging, rinse under cold water and pat dry with paper towels. Season both sides of the scallop with salt and pepper. Brush each side with olive oil.
    Wrap each scallop with a slice of bacon and secure with a toothpick. Depending on the side of the scallops you may only need to use half a slice of bacon.
    Heat grill to medium-high heat. Place scallops on grill. Cook covered 4 to 5 minutes per side or until bacon is crisp and scallops are done.
