Directions

    Preheat oven to 375° F. Rub racks with olive oil, salt, and pepper.
    Put the racks in a roasting pan and roast until an instant-read thermometer inserted in the thickest part reads 135° F, about 12 to 15 minutes.
    Slice the racks between each bone. Arrange the lamb lollies on a platter and serve alongside pots of dipping sauces.
