Turkey-Veal Apple Burgers

A common complaint from customers is that ground turkey is dry and tasteless. We agree that it needs moisture, which is why we often combine the turkey with another ground meat and other ingredients. Here, the apples provide flavorful moisture, while the bread crumbs help hold it in the meat. Mixing the turkey with ground veal helps, too.

    1 1/4 pounds ground turkey breast
    3/4 pound ground veal
    1/2 cup fresh white or whole wheat bread crumbs
    1 apple, firm, ripe, cored, but not peeled and diced
    2 tablespoons fresh thyme, chopped
    1 teaspoon Chinese five-spice powder
    1 teaspoon salt
    1 teaspoon white pepper
    vegetable oil cooking spray

Directions

    Combine the turkey, veal, bread crumbs, apple, thyme, five-spice powder, salt, and pepper in a large bowl. Using your hands, mix well. Form into 6 patties. Refrigerate until ready to grill.
    Prepare a charcoal or gas grill. Lightly spray the grill rack with vegetable oil cooking spray. The coals should be hot.
    Grill the burgers for 8 to 10 minutes. Turn and grill for 5 to 7 minutes longer for medium-well burgers. The juices will run clear when the burgers are pressed gently with a spatula.

Serving Suggestions:

Serve these with Herbed Mayonnaise or Chunky Cranberry Catsup.
