soft and tender when barbecuing for 3 and 1 likes it blood rare and the other likes it medium rare and the 3rd likes it medium well this is the perfect cut of meat. because of the unusual shape you can get all 3 in one steak so throwing a few of these on the grill when you dont wanna be standing over it is a great idea. also great for slicing down on the mandolin while its semi frozen and making steak salad. and for inexpensive lunch with older people who cant chew as easily an extremely tender cut of meat.
