Another great cut! Ordered a whole tenderloin to prepare a beef wellington for Christmas dinner. The cut was the perfect size and shape to fit the dimensions of the puff pastry. The roast was also well tied to facilitate browning of the meat. The wellington was phenomenal the meat came out tender and succulent cooked to perfection wrapped in duxelles fois gras and the pastry. An awesome meal made possible by a great cut of tender flavorful meat.

ORDER # 33622 As always down through the years the quality of your beef tenderloins is positively outstanding! Your attentiveness to my requested delivery date is tremendously appreciated because we split our time between two homes: one in the Bay Area and one in the Lake Tahoe region of the Sierra Nevada.\n\nWhat I do NOT like however is your website. It makes it impossible to communicate with you via email despite the \link chain\ ostensibly in place. A good example was this survey email which you sent to me weeks before you shipped my order. How am I supposed to rate an order that I\m not scheduled to receive for weeks? It makes me question your staff\s common sense.

Christmas Eve Dinner Party Absolutely fantastic. Cooked on the charcoal grill with indirect heat at 450 until the meat had an internal temp of 125. Rest for 20 minutes. Slice and serve. I was the hero of the party.
