Slow and Simple on the grill or in the oven 275 f in a pan cup of good red wine garlic onions celery carrots tbs. mint jelly tbs Dijon.2 and 1/2 hours. after 1 hour check shanks if over cooked reduce heat to 250 f and loosely foil cover. I like to sear the shanks on high heat while I\m straining the liquid and adding 4 tbs. of lobel\s lamb demi glace and stirring it to the liquid and bringing it to a boil . I let the shanks rest 5 minutes covered after I sear. then plate the sauce and the shanks on top of the sauce.
